When you¡¯re born, your body is pH balanced and may even be a little on the alkaline side—a model of perfect metabolic health. But as you age your body chemistry becomes more acidic because you build up more acid waste.
This is because your body¡¯s cells are constantly creating new cells to replace old ones that are damaged or dying. And to do this, your cells burn nutrients as fuel and excrete what¡¯s left as a highly acidic waste product which builds up over the years.
Unfortunately, most all of the foods that we eat are acid-forming such as processed food products, most bottled goods, fats, oils, sugars, bakery goods, cereals and most cooked, fried and baked goods. The modern American diet consists of 80 percent acidic foods and only about 20 percent alkaline foods when we should be eating exactly the opposite—80 percent alkaline foods and only 20 percent acidic foods.
Acid overload can cause problems with your lungs, liver and pancreas¡¦ eat away at the linings of your arteries¡¦ erode cartilage and cause inflammation in your joints¡¦ cause premature wrinkling¡¦ wear down muscle mass¡¦ weaken your immune system¡¦ and drain the calcium from your bones and put you at risk of osteoporosis.
Acid overload is determined by your ¡°potential of hydrogen,¡± or pH level. The pH simply measures how acidic or alkaline your body is on a scale of 0 to 14. A low saliva pH reading of less than 7.0 means you¡¯re too acidic (bad), a pH of 7.0 is neutral and a saliva reading of slightly more than 7.0 means your body is alkaline (good). However, most of us fall in the acid range of 6.2 to 6.4.
But there are ways to combat acid overload.

THE FOOD DOCTOR'S SPECIALTY SOUP
This delicious soup is packed with ingredients shown in clinical studies to relieve joint pain, prevent cancer and heart disease, reduce blood sugar and prevent memory loss.
Ingredients: 1 onion 2 carrots 2 celery sticks 3 medium-sized potatoes 4 medium-sized tomatoes 14-oz. can of chickpeas 5 cups vegetable stock 1 tsp. ground cinnamon 1 ¨ö tsp. ground turmeric 1 Tbsp. grated gingerroot 1/8 tsp. cayenne pepper ¨ö tsp. curry powder 4 strands of saffron 1 bay leaf 1 Tbsp. fresh-squeezed lemon juice.
Preparation: 1. Dice celery, onion and potatoes. Peel and dice carrots. Dice tomatoes, remove seeds. 2. Pour 1¨ö cups of the veggie stock into large saucepan. Add onions and simmer for a few minutes. 3. While onions are simmering, deal with the spices. Mix in the cinnamon, curry, turmeric, cayenne, and ginger and add 2 Tbsp. of the vegetable stock. Mix well. 4. Add this mix to the onions and stock already being heated. 5. Add the rest of your veggie stock to the onion and stock mix and let soup return to boil. Stir, then cover and heat. 6. After 5 minutes, add the potatoes, tomatoes, celery, and carrots and allow it to simmer in the covered saucepan for 20 – 30 minutes or until carrots and celery are tender. 7. Pour in the chickpeas, black pepper, saffron, and fresh-squeezed lemon juice and heat thoroughly before serving. 8. Enjoy! |
